10-12 pieces of Swai Fish1 TBS. Lemon Pepper Seasoning1 TBS. Old Bay Seasoning1/2 TSP. Blackend Seasoning3 C. Yellow Cornmeal1 C. All Purpose Flour2 C. Vegetable Oil
Directions:
Add Vegetable Oil to a skillet. Heat Oil to 350ยบ
Combine Corn Meal, Old Bay, Flour and Blackening Seasoning to a ziplock bag.
Clean the fish in cold water. Pat the fish slightly dry with a paper towel.
Add 2-3 pieces of fish in the ziplock bag, and shake; evenly coat the fish.
Shake the excess of Corn Meal off the fish.
Place fish in the pan, do not over crowd the pan.
Cook fish on both sides for 5 minutes per side.
Remove fish once the fish is golden brown.
Place fish on a baking rack to drain the oil.
Repeat Steps 4 - 9.
After, the fish has drained for 5 minutes place fish on a paper towel.
