  • 5 pieces of Tilapia
  • 2 tablespoons of blackening seasoning
  • 2 tablespoons of olive oil
  • 3/4 cup white wine
  • 1/3 cup heavy cream
  • 3 Tablespoons butter (chilled)
  • 1 lemon (juice only)
  • 1 teaspoon minced garlic
  • Salt and white pepper to taste
  • ¼ cup roasted Red Pepper (diced)
  • 10 oz of Frozen Spinach
  1. Coat the fish fillets with the blackening seasoning.
  2. Heat Olive oil in a skillet over medium heat.
  3. Cook fillets for about 3 minutes per side, or until fish is opaque and can be flaked with a fork.
  4. Remove fish from the pan.
  5. Next, add the minced garlic, spinach, and roasted red pepper. Cook on a low heat until spinach has withered. Then add the white wine, increase the heat to medium and let it cook for about 4 minutes until it has reduced by approximately ⅓ of a cup.

  7. Pour spinach mixture on top of fish. Serve! ***Rice is optional.****
