Crabmeat Topped Gumbo

I love comfort food! Gumbo is absolutely my favorite thing to eat on a cold day; give me my blanket, turn on the fireplace, Netflix and I'm in Heaven. Try it out. Stay warm xoxo🍋

Gumbo

Ingredients:
  • 1 small package chicken wings 
  • 20 oz medium shrimp
  • 1 small package of chicken gizzards (chopped) 
  • 1 package of smoked sausage (sliced)
  • 1 ½ tbsp garlic pepper salt
  • 7 cups water
  • 2 tbsp creole seasoning
  • 8 oz can tomato sauce
  • 1 tbsp old bay seasoning
  • salt/pepper to taste
  • 1 tbsp seasoning salt
  • 2 tbsp parsley
  • 1/2 cup oil
  • 3/4 cup flour
  • 1 tbsp file’ powder
  • 1 whole onion (diced)
  • 1 bell pepper (diced)
  • 8 oz lumped crabmeat (Not Imitation!!!)
  • 8 cups of rice

Instructions:
  1. Place oil and flour in a frying pan, brown the (roux) flour until it’s the color of dark peanut butter. Set aside.
  2. In a large pot, add chicken, gizzards, sausage, peppers, onions, creole seasoning, tomato sauce, old bay, parsley, water, garlic pepper, water and roux.
  3. Bring to a boil, cover and simmer for 1 hour and 30 minutes. Continue to stir to avoid sticking.
  4. Turn off pot, add shrimp and file powder. (Don’t over cook the shrimp!)
  5. After the shrimp has turned pink, ladle gumbo over rice.
  6. Top gumbo with 2 tablespoons of lump crabmeat.
  7. Garnish and serve.
